QUICK AND EASY PUMPKIN MUFFIN CAKES

Einkorn muffin cakes with pumpkin, cinnamon and wholemeal flour.

Ingredients:

  • 2 cups of einkorn flour
  • 4 eggs
  • 1 cup of brown sugar
  • 400 g grated pumpkin (raw or baked)
  • 2/3 cup of oil
  • 100 g crushed walnhuts
  • ½ tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon

Method:

  1. Mix the eggs, sugar and oil in a bowl.
  2. Gradually add the einkorn flour, vanilla extract and baking soda, while stirring continuously until a homogenous mixture.
  3. Add the pumpkin, walnuts and cinnamon, and stir again.
  4. Place a muffin paper into every nest of the muffin tray and pour the mixture into each paper to reach 3/4s of its volume.
  5. Bake in a preheated oven at 180-200 degrees, for about 20-25 minutes.
