MEXICAN COOKIES WITH EINKORN, CHOCOLATE AND SPICES

Ingredients:

  • 4 tbsp. butter
  • 57 g dark chocolate
  • ¾ cup of brown sugar
  • ¼ cup of cacao powder
  • 1 medium sized egg
  • ½ tsp salt
  • 1/3 cup of chocolate chips
  • ¾ cup of sifted einkorn flour
  • ¼ tsp baking soda
  • ¾ tsp cinnamon
  • ¼ tsp black pepper

Method:

  1. Mix the dark chocolate and butter and use a water bath to melt.
  2. Use quick movements to mix the einkorn flour, baking soda, cinnamon and black pepper.
  3. Add the sugar, cacao powder, egg and salt until a smooth, thick mixture.
  4. Add the melted chocolate and the chocolate chips.
  5. The mixture needs to turn into a dry dough. Add more flour if needed.
  6. Shape the cookies and place them on an oiled baking tray.
  7. Bake in a preheated oven at 165 degrees, for 13 minutes, and then rotate the tray.
  8. The cookies will look flat and cracked on top. When they cool down they are ready to be served.
